Knife Steel Types: A Field Guide to What Each Alloy Is Good For

From soft, tough carbon steels that spark a ferro rod to super-hard powder metallurgy blades that hold an edge for a week of processing. Here is what every common knife steel is actually good for.

Every knife is a compromise between four properties: edge retention, toughness, corrosion resistance, and ease of sharpening. The steel the blade is made from decides where that compromise lands. There is no "best" knife steel — only the right steel for the job.

This guide walks the steels you will actually see on outdoor, kitchen, EDC and hunting knives, groups them by family, and tells you what each is good at (and what it is bad at).

Damascus steel hunting knife

The four properties, quickly

  • Edge retention — how long the working edge stays sharp. Driven by hardness (Rockwell C, "HRC") and the size and hardness of the carbides in the steel.
  • Toughness — resistance to chipping and breaking under lateral load, batoning, or prying. Generally the opposite of edge retention.
  • Corrosion resistance — how much chromium (and other elements) is in the alloy. More than ~12% free chromium = "stainless."
  • Sharpenability — how easy it is to bring the edge back with a stone in the field. Simple steels sharpen fast; wear-resistant super-steels are slow to grind.

Trade-offs matter more than the alphabet soup: a $30 Mora in plain 1095 will out-cut a $400 super-steel knife if you cannot get the super-steel sharp in camp.

Carbon steels (non-stainless)

Simple iron + carbon (+ a little manganese/silicon). Tough, easy to sharpen, and will rust the moment you look at them wrong.

1095

The classic bushcraft and survival steel. Used by Ka-Bar, ESEE, Becker, Ontario, and the older Moras. Runs 56–58 HRC on most brands.

  • Good for: batoning, fire-craft, hard field use, resharpening on a river-cobble.
  • Bad at: rust resistance (wipe it dry, oil it) and pure edge retention next to stainless super-steels.
  • Why bushcrafters love it: it throws sparks off a ferro rod with a 90-degree spine, sharpens on almost anything, and if you chip it, you can grind the chip out with a rock.

O1 (oil-hardening tool steel)

A step up from 1095 — a little chromium, tungsten and vanadium. Bark River and many custom makers use it.

  • Good for: general bush use, higher polish, cleaner edge than 1095.
  • Bad at: rust; even worse than 1095 in humidity.

52100 (ball-bearing steel)

High-carbon, small carbides. Extremely fine grain — takes a hair-popping edge and holds it well for a non-stainless.

  • Good for: hunting and skinning knives; kitchen knives if you keep them dry.
  • Bad at: rust, again.

Carbon steel Moras (Morakniv Classic, Companion HC)

Laminated carbon steel with soft outer layers and a hard core. Sharpens like butter, holds an edge better than the price suggests. Every bushcraft cabinet needs one.

Stainless steels — budget to mid range

Chromium >12% means the blade forms a protective oxide layer instead of red rust. You give up a little toughness and sharpenability.

8Cr13MoV / 9Cr18MoV

The default steel of budget folders (many CJRB, Civivi, Kershaw, older Spydercos). 8Cr behaves like a softer AUS-8; 9Cr is meaningfully better.

  • Good for: first knives, beater EDC, work you do not mind sharpening weekly.
  • Bad at: edge retention over a full day of cardboard cutting.

AUS-8 / AUS-10

Japanese stainless. AUS-8 is tough and easy to sharpen; AUS-10 adds carbon for more edge retention.

  • Good for: general-purpose folders and fixed blades in a wet environment.

440C

The old classic stainless. Better than 440A/B; comparable to a low-end 154CM. Common on hunting and dive knives.

14C28N / 12C27 (Sandvik)

The steel in modern Morakniv stainless models and Kershaw budget folders. Fine grain, easy sharpening, respectable edge for a "low-alloy" stainless. 14C28N adds nitrogen for better corrosion.

  • Good for: wet-weather bushcraft, fish knives, canoe knives, first-time sharpeners.

VG-10

Japanese laminate favourite (Fallkniven, Spyderco Delica, many Shun kitchens). Balanced, takes a fine edge, moderate wear resistance.

  • Good for: kitchen and light outdoor use.
  • Bad at: hard chopping (can chip if used like a chopper).

Stainless steels — high performance

154CM / ATS-34 / RWL-34

American and Japanese equivalents. The workhorse "premium" stainless of the 1990s–2000s. Still excellent.

S30V / S35VN / S45VN (Crucible CPM)

Powder metallurgy stainless. S30V was the "premium" folder standard for a decade; S35VN adds a little niobium for improved toughness and easier sharpening; S45VN is the current refinement.

  • Good for: premium EDC folders (Benchmade, Spyderco, Zero Tolerance).
  • Bad at: cheap-and-fast field sharpening; you need diamond or a good ceramic.

M390 / 20CV / CTS-204P

Three near-identical high-vanadium high-chromium powder steels from Böhler-Uddeholm, Crucible, and Carpenter respectively. About as good as stainless gets before you go extreme.

  • Good for: all-day cardboard, saltwater, EDC that gets sharpened once a month.
  • Bad at: field maintenance; buy a diamond plate before you buy the knife.

MagnaCut (Crucible CPM)

The current darling. Designed by Dr. Larrin Thomas specifically to break the toughness-vs-corrosion trade-off. Real-world it lives close to CruWear toughness with M390-level corrosion.

  • Good for: a "one knife" premium user — hunter, EDC, kitchen.

Non-stainless tool steels — the tough guys

D2 / Cru-Wear

Semi-stainless (about 11.5% chromium — will still spot rust). D2 is common on Bark River, Benchmade, ESEE-Xtreme; CruWear is the modern, tougher, better-grained cousin.

  • Good for: hard use knives, hunting, chopping.
  • Bad at: taking a mirror polish; the coarse carbides give a toothy edge (great for rope, not for shaving).

CPM-3V / CPM-4V

Ultra-tough powder steels. 3V is the go-to for hard-use fixed blades that will get abused (Bark River Bravo, Fehrman, TOPS).

  • Good for: batoning, prying (do not, but if you must), machete-style chopping.
  • Bad at: corrosion — treat it like carbon steel.

A2

Old-school tough tool steel. Blind Horse, LT Wright, ESEE-3. Basically indestructible for the price.

Kitchen and specialty

  • VG-10, SG2/R2, Aogami "Blue" and Shirogami "White" carbon papers — Japanese kitchen knives.
    • Blue #2: tough, holds a razor edge, will patina. Gyuto, petty.
    • White #2: pure carbon, cleanest edge you can put on a knife, needs babying.
  • X50CrMoV15 — European "German" kitchen stainless (Wüsthof, Henckels). Soft (56 HRC) so it hones easily on a steel; will not chip.

What to buy from Amazon to actually test this

You do not need a $500 knife to understand steel. Buy three inexpensive knives in three different steels and use them for a month:

Sharpen each of them after a full day of use. You will feel the difference in your wrists.
