Meal planning by day, not by meal, changed my packing
I bag each day complete instead of packing categories. Fewer decisions, no accidentally eating day five's dinner on night two, and easier to hand a day to a partner. Simple change, big effect.

Cast iron dutch oven cobbler that never fails
Canned peaches, a box of yellow cake mix, and a stick of butter with coals top and bottom. Twelve coals on the lid, six underneath, thirty minutes. It has never let me down at a family camp.

Breakfast that is worth cooking instead of eating cold
Fried tortillas with eggs, chorizo, and hot sauce on the first morning while the fresh food is still good. Every other morning is oatmeal and I make peace with it. What is your day-one breakfast?

Camp coffee: the method that finally won
Aeropress at basecamp, instant with a splash of milk powder on the trail, and cowboy coffee only when I am feeling romantic. The instant options in 2026 are genuinely good. Change my mind.

Salting and cooking fresh-caught trout at camp
Gut, salt, stuff with whatever herb you can find, and cook over coals on green sticks. Nothing else you carry will taste that good. Do not overcook it — pull it early.

One-pot dinner that survives a rough week
Couscous, olive oil, sun-dried tomato, hard salami, and parmesan. Nothing in it can freeze solid or spoil, and it needs boiling water only. Ten minutes from stove-on to eating.

Best meal I have dehydrated at home — full recipe
Chili with ground beef rinsed of fat, black beans, and a heavy hand on the cumin. Dries in nine hours and rehydrates in twelve minutes of soak plus a short simmer. Roughly 620 calories per serving at 4.6 ounces.

Highest calorie-to-weight foods in my pack
Olive oil at 250 calories an ounce, peanut butter powder plus oil, and full-fat milk powder in coffee. Getting to 130 calories per ounce overall is the goal on long trips. What is in yours?
