Camping Skillet Breakfast: Hearty Sausage & Potato Start
Prep: 5 min
Cook: 20 min
Serves: 2
Difficulty: Easy

Ingredients

  • •1/4 pound bulk hot pork sausage
  • •1/2 chopped red bell pepper
  • •1/4 chopped small onion
  • •1 cubed medium red potato
  • •1/4 cup shredded cheddar cheese
  • •2 eggs
  • •2 tablespoons butter
  • •2 chopped green onions
  • •to taste salt and pepper
  • •optional for serving hot sauce

Equipment

  • • Cast iron skillet
  • • Campfire or propane stove

Instructions

  1. 1Get a campfire going to create campfire coals for cooking over medium high heat.
  2. 2Heat the cast iron skillet over the heat.
  3. 3Add the sausage to brown it, breaking it up into crumbles as it cooks.
  4. 4Add the butter, bell pepper, onion, potatoes, salt, and pepper, stirring occasionally. Cook covered until the potatoes are softened, about 8 minutes.
  5. 5Flatten the ingredients across the bottom of the skillet and create 'wells' for cooking the eggs.
  6. 6Crack the eggs into the wells or use beaten eggs for scrambled eggs.
  7. 7Cover and cook until the eggs are done to your desired likeness, about 3-5 minutes.
  8. 8Sprinkle with cheese, cover, and let the cheese melt slightly.
  9. 9Remove from heat, top with green onions, and serve hot.

Camp tips

  • • Use a 10-inch cast iron skillet for 1-2 servings.
  • • Cover the skillet while cooking to retain heat.
  • • You can make scrambled eggs in the same pan by beating them and pouring them into the wells.
