Hearty Camping Breakfast Skillet with Sausage & Eggs
Prep: 15 min
Cook: 35 min
Serves: 6
Difficulty: Easy

Ingredients

  • •0.5 pound bulk pork sausage
  • •4 strips bacon strips
  • •3 cups frozen O'Brien potatoes
  • •1 large sweet potato
  • •2 tablespoons canola oil
  • •1 cup chopped fully cooked ham
  • •1 small apple
  • •6 large large eggs
  • •0.5 teaspoon kosher salt
  • •0.25 teaspoon coarsely ground pepper
  • •1 cup shredded cheddar cheese

Equipment

  • • cast-iron skillet
  • • grill

Instructions

  1. 1Preheat the grill to medium heat and place a 10-in. cast-iron skillet on the grill rack.
  2. 2Add the sausage and cook until no longer pink, about 6-8 minutes, breaking into crumbles. Drain and set aside.
  3. 3In the same skillet, cook bacon until crisp, stirring occasionally. Drain on paper towels.
  4. 4In the bacon drippings, cook O'Brien potatoes and sweet potato until crisp-tender and lightly browned, about 7-9 minutes. Stir in the cooked sausage, ham, and apple.
  5. 5Make 6 wells in the potato mixture and crack an egg into each. Sprinkle with salt and pepper. Close the grill lid and cook until whites are almost set, about 2-3 minutes. Sprinkle with cheese and close lid until melted.

Camp tips

  • • Use a mix of fresh and frozen potatoes for better texture.
  • • Experiment with different meats or vegetables for personalization.
