Prep: 5 min
Cook: 90 min
Serves: 6
Difficulty: Easy

Ingredients

  • •2 slices bacon
  • •1 medium onion
  • •4 cloves garlic
  • •1 pound ground beef
  • •1 package (14 oz.) hot smoked andouille sausage
  • •3 tablespoons all-purpose flour
  • •1/2 teaspoon salt
  • •1/4 teaspoon black pepper
  • •4 medium potatoes
  • •1 can (15 oz.) diced tomatoes
  • •1 can (15 oz.) pinto beans
  • •1 can (15 oz.) cut green beans
  • •1 can (15 oz.) whole kernel corn
  • •1 can (4 oz.) chopped green chilies

Equipment

  • • 12-inch cast iron Dutch oven

Instructions

  1. 1Prepare your ingredients as directed.
  2. 2Prepare your heat source for cooking with bottom heat for about 1.5 hours of total cooking time.
  3. 3Heat a 12-inch cast iron Dutch oven over medium heat and add the bacon to the pot. Stir it so it doesn’t stick. Don’t drain the grease from the pot.
  4. 4Place the onion and garlic in the pot, continually stirring until they are softened.
  5. 5Place the ground beef in the pot and use a spoon to break it up as it browns. Don’t drain the grease from the pot.
  6. 6Add the sausage and stir it with the rest of the ingredients.
  7. 7Thicken the mixture by adding the flour, salt, and pepper to the pot. Cook for a couple of minutes before adding anything else.
  8. 8Dump in the canned veggies with all their liquids and the potatoes. Stir everything to combine well.
  9. 9Bring the mixture to a boil, then reduce the heat to simmer. Cover and cook for about an hour, stirring occasionally.

Camp tips

  • • Make sure your pot is large enough if you plan to double the recipe.
