Canoeing Pineapple Beef Stir Fry: Easy Campfire Meal
Prep: 10 min
Cook: 15 min
Serves: 4
Difficulty: Easy

Ingredients

  • •1 lb Beef Jerky
  • •1 can Pineapple chunks
  • •1 Peppers
  • •1 Mushrooms
  • •1 Onions
  • •2 tbsp Brown Sugar
  • •2 cloves Garlic
  • •1 inch Ginger
  • •3 tbsp Soy Sauce
  • •2 tsp Corn Starch
  • •1 tbsp Oil for frying

Equipment

  • • Pot
  • • Frying pan
  • • Cook stove

Instructions

  1. 1Rehydrate the beef, veggies and pineapple by putting them in a pot with just enough water to cover – bring to boil, remove from heat, and let sit for about an hour.
  2. 2Drain the water into a bowl. Make the sauce by adding soy sauce and brown sugar to taste.
  3. 3Fry up the rehydrated ingredients, sprinkling with the garlic and ginger.
  4. 4Add the sauce.
  5. 5Mix up cornstarch in cold water and add to the pot. Taste and add more spices, soy sauce, or sugar if desired. Bring to a boil and stir until it thickens.
  6. 6Serve over rice vermicelli noodles or rice.

Camp tips

  • • For best flavor, let the beef jerky marinate in the soy sauce ahead of time.
  • • Consider adding your favorite vegetables to customize the stir fry.
  • • Serve with plenty of rice for a hearty meal.
