Cook: 15 min
Serves: 6
Difficulty: Easy

Ingredients

  • •3 large eggs
  • •2/3 cup whole milk
  • •2/3 cup all-purpose flour
  • •2 Tbsp sugar
  • •1/4 tsp salt
  • •1/2 tsp vanilla extract
  • •2 Tbsp butter

Equipment

  • • Blender
  • • 10-inch cast iron skillet

Instructions

  1. 1Prepare the batter by adding the eggs, milk, flour, sugar, salt, and vanilla extract to a blender. Blend until smooth and let the batter rest at room temperature.
  2. 2Preheat the oven to 425ºF with a 10-inch cast iron skillet inside. Heat the skillet for an additional 10 minutes after the oven reaches the set temperature.
  3. 3Carefully remove the skillet and add the butter, swirling it until melted. Return the skillet to the oven for 30-60 seconds until the butter begins to brown.
  4. 4Remove the skillet and swirl the melted butter evenly. Quickly pour the prepared batter into the hot skillet.
  5. 5Return the skillet to the oven and bake for 14-15 minutes until golden brown and puffed at the edges. Cut into pieces and serve with maple syrup and fresh berries.

Camp tips

  • • Use a blender for a smooth batter with no lumps.
  • • Preheat the skillet to ensure a hot start for the batter.
  • • Move quickly when adding butter and batter to prevent cooling.
