Cook: 25 min
Serves: 4
Difficulty: Easy

Ingredients

  • •12 oz frozen mixed berries
  • •1/4 cup sugar
  • •1.5 Tbsp cornstarch
  • •1 whole fresh lemon
  • •1 cup all-purpose flour
  • •1 tsp baking powder
  • •1/4 cup sugar
  • •1/8 tsp salt
  • •4 Tbsp cold butter
  • •5 Tbsp milk

Equipment

  • • Oven
  • • Casserole dish
  • • Mixing bowls
  • • Zester

Instructions

  1. 1Preheat the oven to 425ºF. Use a zester to remove the zest from the lemon.
  2. 2Place the thawed berries in a bowl. Add sugar, cornstarch, 1/2 tsp of lemon zest, and 1 Tbsp lemon juice. Stir and pour into a small casserole dish.
  3. 3In a medium bowl, mix flour, baking powder, sugar, salt, and another 1/2 tsp of lemon zest. Cut in cold butter until it resembles damp sand. Stir in milk until sticky dough forms.
  4. 4Drop the biscuit dough onto the berries in small pieces.
  5. 5Bake for 20-25 minutes or until the top is golden brown and berries are bubbling. Place the dish on a baking sheet to catch spills.
  6. 6Serve warm topped with ice cream or whipped cream if desired.

Camp tips

  • • You can use non-dairy milk as a substitute.
