Prep: 10 min
Cook: 10 min
Serves: 6
Difficulty: Easy

Ingredients

  • •1 whole Zucchini
  • •1 whole Tomatoes
  • •4-6 portions Wild Alaskan Sockeye Salmon Portions
  • •1 sheet Foil
  • •1 optional Parchment Paper
  • •1 tsp Brown Sugar
  • •2 tsp Paprika
  • •1.5 tsp Salt
  • •1.5 tsp Onion Powder
  • •1 tsp Dry Thyme
  • •1 tsp Black Pepper
  • •0.5 tsp Garlic Powder
  • •0.5 tsp Dry Mustard
  • •0.5 tsp Curry
  • •0.5 tsp Chili Flakes

Equipment

  • • Grill
  • • Foil
  • • Parchment Paper
  • • Campfire
  • • Spice Jar

Instructions

  1. 1Cut foil squares large enough to wrap around each portion of salmon and line each square with parchment paper.
  2. 2Cut zucchini in half and slice thin.
  3. 3Slice tomatoes about ⅓ inch or preferred thickness.
  4. 4On each parchment paper place 3 slices of zucchini down and 2 slices of tomatoes, season with salt and pepper or the spice mix.
  5. 5Place salmon on top of the tomatoes and season well with the spice mix.
  6. 6Bring the long ends together and roll them tight to seal the salmon in foil. Wrap them again with another piece of foil to ensure protection during cooking.
  7. 7Place the packs on the embers and cook for 8-10 minutes, monitoring to prevent burning.

Camp tips

  • • Prepare the spice mix in advance for easy seasoning while camping.
  • • Serve with a side of grilled vegetables for a complete meal.
  • • For non-campfire cooking, bake or grill the salmon at 375°F.
