Easy Camping Shrimp & Veggie Foil Packs
Prep: 10 min
Cook: 8 min
Serves: 5
Difficulty: Easy

Ingredients

  • •1 lb large shrimp
  • •2 cups zucchini
  • •2 cups yellow squash
  • •2 cups red bell pepper
  • •1 cup red onion
  • •1 tsp garlic cloves
  • •0.5 tsp Italian seasoning
  • •0.5 tsp smoked paprika
  • •1 tsp salt
  • •0.5 tsp black pepper
  • •0.25 cup white wine
  • •2 Tbsp salted butter
  • •lemon slices

Equipment

  • • grill
  • • heavy-duty foil
  • • large bowl

Instructions

  1. 1Gather and prep all ingredients. Preheat the grill to 400°F.
  2. 2In a large bowl, add shrimp, zucchini, yellow squash, red bell pepper, red onion, garlic, Italian seasoning, smoked paprika, salt, black pepper, and wine, and stir well.
  3. 3Cut five 12×18-inch sheets of heavy-duty foil. Divide the shrimp and vegetable mixture evenly between the 5 foil packs, placing in the middle of the foil with a pat of butter on top. Bringing the short sides of the foil together, fold the seams together twice, and then tuck the ends in and up to seal tightly.
  4. 4Place the packets on the grill and cook for 8 minutes.
  5. 5Remove packets from the grill and allow them to cool for 3-5 minutes. Then, serve with fresh lemon slices and enjoy!

Camp tips

  • • Let the packets rest for a few minutes after grilling so the juices can redistribute.
  • • Customize each pack to fit everyone’s taste with different veggies or spices like red pepper flakes.
  • • Ensure packets are sealed tightly to lock in steam and flavor.
  • • For oven cooking, preheat to 425°F and bake for about 15-20 minutes until shrimp is cooked through.
  • • Avoid freezing leftovers as shrimp and veggies may become mushy.
