Easy Backpacking Quinoa Salad
Prep: 10 min
Cook: 30 min
Serves: 2
Difficulty: Easy

Ingredients

  • •1 cup quinoa
  • •1 cube vegetable bouillon
  • •½ cup dried vegetables
  • •1 tablespoon dried oregano
  • •½ teaspoon garlic powder
  • •¼ teaspoon salt
  • •1 tablespoon olive oil
  • •1 lemon
  • •cheese, fresh vegetables, herbs

Equipment

  • • pot
  • • zip-top bags

Instructions

  1. 1Add 1 cup of water to the quinoa package and let the quinoa soak for 1 or 2 hours before cooking. If using dried vegetables, add an extra cup of water.
  2. 2Empty the package of soaked quinoa (liquid and all) into a medium-sized pot. Pour 1 cup of water into the soaking package to rinse out the remaining quinoa and pour it into the pot.
  3. 3Bring everything to a boil over high heat. Reduce the heat and simmer for 5 minutes, until the water is absorbed and the quinoa is cooked. If adding any vegetables that need to be cooked, stir them in with the quinoa.
  4. 4When the quinoa is fully cooked, remove from heat. Stir in the flavor package, olive oil, and any other fresh flavors like herbs, vegetables, and cheese. Serve with 2 slices of lemon.

Camp tips

  • • Perfect for using whatever fresh or dried vegetables you have available.
  • • Add additional water if using dehydrated vegetables for soaking.
  • • For a variety of flavors, try adding different fresh vegetables after cooking.
